Found this here, and love it! I made a few little modifications

  • 1 tsp olive oil
  • 1/4 green pepper, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 jalapeno, finely chopped (optional)
  • 1 cup firm tofu, cubed
  • 2 cloves garlic, finely chopped
  • 2 heaped tablespoons salsa (or more!)
  • 1 tsp olive oil

  • 1/2 red onion, finely chopped
  • 1/2 jalapeno, finely chopped
  • 1 cup firm tofu, crumbled
  • 2 cloves garlic, finely chopped
  • 2 heaped tablespoons salsa
  • Hot sauce (to taste)
  • 1/4 cup cilantro, finely chopped (optional -- I hate cilantro, so I leave it out)

  • 3 tortillas (corn or flour)
  • 1/2 avocado, diced (optional -- I dislike avacado)
