- 1/2c margerine
- 1c natural sugar
- 1tsp vanilla
- 2-3 bananas
- 1/4c coconut milk
- 1 1/2c whole wheat flour
- 1/4c cocoa
- 1 1/2tsp baking power
- 1/2 tsp baking soda
- 2 tbsp ground flax seed (flax meal), mixed with 6 tbsp warm water -- let sit for about 10-15 mins to thicken.
Mix everything together, I use an egg beater, put in a loaf pan, bake at 350 for 40 - 60 minutes (until a toothpick comes out clean)
[2009-06-10] Update: added the ground flax seed -- was very successful.
