Vegan Banana Bread

  • 2 tbsp ground flax seed (fresh ground is best, but pre-ground is fine)
  • 1/4c non-dairy milk (almond, coconut, soy, etc)
  • 1 1/2c whole wheat flour
  • 1/4c cocoa
  • 1 1/2tsp baking power
  • 1/2 tsp baking soda
  • salt
  • 1/2c margarine
  • 1c natural sugar
  • 1tsp vanilla
  • 2-3 mashed over-ripe (or frozen) bananas
  1. Mix flax seed with non-dairy milk, set aside for 10-15 mins
  2. Mix dry ingredients well
  3. Mix wet ingredients, including the flax seed mixture
  4. Mix wet and dry ingredients together
  5. Put into loaf pan, bake at 350 for 40 - 60 mins (until a toothpick comes out clean)
